Cold sauces…

Sauces are used for sweet and savoury dishes. So, they may be prepared and served cold like mayonnaise. Cold sauces category contains a wide variety of preparations. Thus far, it may be basic oil and vinegar mixture to relishes, pesto and salsa. Other sauces in this class may include chutneys, dips and compotes.

Mayonnaise and vinaigrette types of dressings mostly fill the role in this category. Hence, they are versatile with endless variations. Some sauces are prepared cold, however, served lukewarm like pesto. Others are cooked and served warm like bechamel and cooked and served cold like apple sauce. The term mother sauces date back to 18thcentury. Due to lacking refrigeration, foods used to spoil much faster. So, sauces were crucial to cover up the flavour of less than perfect meats, seafood and poultry. 

The five mother sauces include béchamel sauce, veloute sauce, brown or Espagnole sauce, Hollandaise sauce and tomato sauce. So, the French refer to these sauces collectively as ‘sayces meres’ or ‘grandes’ sauces.

The mother sauces form the basic cornerstone on which you may build many other sauces. So, they are versatile. Thus far, stood the test of times.

Purpose of cold sauce

In cooking, a sauce may be a liquid, cream or in semi solid food state. It is either served on or used to cooking other foods. Cold sauces are a great change of pace in your cooking. Thus far, they are convenient and you may make them ahead of time. They are superb for warm weather culinary experiences. Thus far, cold sauces do not require and last-minute heating. So, they go well with all kinds of grilled meats, vegetables and seafood.

Sauces like hollandaise, béarnaise, and their derivatives form a class of emulsion sauces. It includes the cold sauce mayonnaise too. In fact, these sauces normally include wine, wine vinegar, vinegar or lemon juice. Hence, to stabilise the sauce egg yolks may be added.

Types of cold sauces 

Garlic butter keeps well in the fridge. Hence, you can prepare well in advance. Garlic butter sauce is perfect for chicken, chops and steaks. It goes well with even seafood. So far, nothing beats the appearance of a melting glob of garlic butter slowly disappearing over a perfectly cooked meat.

The recipe of making homemade cocktail sauce is simple. Thus, there is no reason to buy cocktail sauces. So far, you may enjoy cocktail sauce on cold seafood too. It is also delicious on other seafood like fried calamari, crab cakes and prawn cutlets.

The most popular American salad dressing is the ranch dressing. Thus far, it may be the most popular dip too. Ranch dressing is delicious on almost everything; from raw vegetables to fried chicken wings. Furthermore, garlic mayonnaise or aioli is one of the most popular cold sauces. Aioli is a simple recipe with many uses. It is superb as a sandwich spread, delicious as dip for vegetables and great with grilled seafood. 

One of the best ways to enjoy fresh tomatoes is in a salsa. It is great on everything, from your favourite chips or wedges to grilled meats. Salsa is a refreshing break from conventional sauces.

So far, horseradish and beef are a great combination. However, ensure to use a fresh jar of horseradish sauce. So, this classic cold sauce may give have the signature kick. Honey Dijon sauce is another favourite cold sauce. It is great for most types of salads, especially suited to the more bitter greens. So, the sweetness in the dressing works fantastic with the pronounced flavours. Honey Dijon dressing is excellent as basting sauce for grilled meats.
