Turkey’s tail is typically a gland that attaches the turkey fearthers to its body. It is full of poultry oil that the turkey uses to preen itself. Almost 75 percent of its calories come from fat. Turkey consumption was a novelty for consumers before World War II. Since then, there have been industrial-scale livestock production evolution. During this evolution, the production and size of turkey increased substantially. This includes a quarter-billion turkey tails which is also known as the parson’s nose, pope’s nose, or sultan’s nose. A few people developed a taste for turkey tails. So, rather than letting it go to waste, the poultry industry saw a niche business opportunity. The target market was the Pacific Islands where animal protein was scarce in the 1950s. It is a favourite food in Samoa.

Turkey’s tails are a delicacy for many islanders. Typically it is first boiled to get rid of the fat. Then chop the turkey tails into pieces and stir fry with vegetables. Other options are either baking them whole or to bar-b-cue.
